Ingredients

  • 4 cups chicken or vegetable broth
  • 2 tablespoons cornstarch
  • 1 inch fresh ginger, grated
  • 2 cloves garlic, minced
  • 3 large eggs, beaten
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Bring the broth to a boil in a pot.
  2. Mix cornstarch with a little water to create a slurry, then add it to the boiling broth to thicken.
  3. Add ginger and garlic to the broth and let it simmer for a minute.
  4. Reduce heat to low and gently pour in the beaten eggs while stirring the soup to create silky strands.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with green onions.

Notes

Feel free to customize with additional veggies like spinach or mushrooms, and top with sesame oil for extra flavor.
