Ingredients
- 4 cups chicken or vegetable broth
- 2 tablespoons cornstarch
- 1 inch fresh ginger, grated
- 2 cloves garlic, minced
- 3 large eggs, beaten
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Bring the broth to a boil in a pot.
- Mix cornstarch with a little water to create a slurry, then add it to the boiling broth to thicken.
- Add ginger and garlic to the broth and let it simmer for a minute.
- Reduce heat to low and gently pour in the beaten eggs while stirring the soup to create silky strands.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions.
