Description

Delicious Vietnamese egg rolls filled with lean proteins, fresh vegetables, and noodles, offering a blend of crispy textures and rich flavors.


Ingredients

  • 1 pound lean ground pork or shrimp
  • 1 cup shredded carrots
  • 1 cup finely chopped mushrooms
  • 1 cup bean sprouts
  • 1 cup vermicelli noodles, cooked
  • 1 tablespoon fish sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 package rice wrappers
  • Vegetable oil for frying or baking


Instructions

  1. In a large bowl, mix ground pork or shrimp, carrots, mushrooms, bean sprouts, vermicelli noodles, fish sauce, salt, and pepper together.
  2. Soak rice wrappers in warm water until pliable.
  3. Place a few tablespoons of filling onto the wrapper, fold in the sides, and roll tightly.
  4. For frying, heat oil in a pan and fry rolls until golden brown. For baking, preheat oven to 400°F (200°C) and bake for about 15-20 minutes until crispy.
  5. Serve warm with your favorite dipping sauce.

Notes

To make these rolls healthier, consider baking or air frying instead of deep-frying. You can also substitute traditional noodles with whole grain or gluten-free options.
