Description

Ingredients

  • 2 cups mixed dried fruit (raisins, cherries, pineapple)
  • 1 cup pecans, chopped
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 3 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup rum (optional)


Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a large bowl, mix together the dried fruit and pecans.
  3. In another bowl, cream the butter and brown sugar until smooth.
  4. Add the eggs, one at a time, beating well after each addition.
  5. In another bowl, whisk together the flour, baking powder, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the fruit and nuts.
  8. Pour the mixture into a greased loaf pan.
  9. Bake for 1 hour or until a toothpick comes out clean.
  10. Let cool before serving.
