Ingredients
- 4 cups chicken or vegetable broth
- 2 large eggs
- 1 tablespoon cornstarch (optional for thickness)
- 1 teaspoon soy sauce
- 1 teaspoon freshly grated ginger
- 1 clove garlic, minced
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a pot, bring the broth to a gentle boil.
- Whisk the eggs in a bowl.
- Slowly pour the beaten eggs into the boiling broth while stirring gently to create thin ribbons.
- Add cornstarch mixed with a little water if using, along with soy sauce, ginger, and garlic.
- Cook for another minute, then remove from heat.
