Description
A classic Mexican dish made of poblano peppers stuffed with cheese or meat, coated in batter, and fried to golden perfection.
Ingredients
- 4 poblano peppers
- 1 cup queso fresco (or other cheese)
- 1/2 cup minced meat (optional)
- 1/2 cup flour
- 4 egg whites
- Salt to taste
- Oil for frying
Instructions
- Roast the poblanos over a flame until charred.
- Remove the skin and slice open the peppers to remove seeds.
- Prepare the filling by mixing cheese and seasoned meat (if using).
- Stuff the peppers with the filling carefully.
- In a bowl, whip egg whites until fluffy.
- Carefully coat the stuffed peppers in egg whites and then in flour.
- Heat oil in a frying pan and fry the peppers until golden brown.
- Serve hot with salsa and warm tortillas.

For a healthier option, try baking the stuffed peppers instead of frying them. Variations include using different types of peppers or filling options.
