Description

A classic Mexican dish made of poblano peppers stuffed with cheese or meat, coated in batter, and fried to golden perfection.


Ingredients

  • 4 poblano peppers
  • 1 cup queso fresco (or other cheese)
  • 1/2 cup minced meat (optional)
  • 1/2 cup flour
  • 4 egg whites
  • Salt to taste
  • Oil for frying


Instructions

  1. Roast the poblanos over a flame until charred.
  2. Remove the skin and slice open the peppers to remove seeds.
  3. Prepare the filling by mixing cheese and seasoned meat (if using).
  4. Stuff the peppers with the filling carefully.
  5. In a bowl, whip egg whites until fluffy.
  6. Carefully coat the stuffed peppers in egg whites and then in flour.
  7. Heat oil in a frying pan and fry the peppers until golden brown.
  8. Serve hot with salsa and warm tortillas.

Notes

For a healthier option, try baking the stuffed peppers instead of frying them. Variations include using different types of peppers or filling options.
